This class will meet, light rain or shine and will be mainly outdoors, so bring your water and your sunscreen. I'd also suggest wearing a hat.

Cooking with Herbs: Herbal Holiday Cookies on Thursday, December 4 at River House

Looking for something different to bring to the holiday cookie swap this year? Aromatic herbs such as rosemary, thyme and chamomile are not only therapeutic herbs, but they also bring wonderful flavor to desserts. In this class, you will watch a cooking demonstration, and learn easy holiday cookie recipes incorporating culinary and therapeutic herbs. At the end of class participants will have the opportunity to sample the cookies prepared and go home with new holiday cookie recipes to try!
James is a Professor of Biological Sciences at St. Johns River State College, a Master Herbalist and award- winning Personal Chef.
This one day class will meet on Thursday, December 4 from 2 to 3:30 at River House (179 Marine St. in St. Augustine).

Lynn Ringhaver RN., BSN., L.Ac. was an Intensive care nurse for 15 years before moving into Integrative Medicine. She was in private practice for over 20 years including: Shiatsu, acupuncture, herbal medicine, and nutrition. Certified in Mindfulness Based Stress Reduction with Jon Kabat-Zinn. Certified in Qi Gong with Master Robert Peng. Emotional Freedom Technique training with Dawson Church PhD.

Cooking with Herbs: Infused Oils and Compound Butters on Thursday, December 11 at River House

Oils and Butter are essential fats that bring richness of flavor to a meal. Infusing herbs and spices into oil and butter enhances meals by imparting complex flavors, therapeutic benefits and phytonutrients without adding additional salt or sugars. In this class, we will discuss the differences between saturated and unsaturated fats, the smoke point of oils, and which fats are best for specific cooking applications. You will learn simple, flavor-packed recipes and might even have some new ideas for holiday gift giving!
